Carne Guisada

Ingredients:

  • 2 lb Beef shoulder
  • 1 tbsp Olive oil
  • 2 Medium fresh poblano peppers, seeded and chopped
  • 1 Large white onion, chopped
  • 3 Garlic cloves, crushed
  • 1 tsp Kosher salt
  • 1/2 tsp Ground cumin
  • 1/2 tsp Ground black pepper
  • 1/2 tsp Chili powder
  • 1 Large fresh tomato, chopped
  • 1 Large fresh tomatillo, chopped
  • 3/4 cupReduced-sodium beef broth
  • 2 tbsp Unbleached, all-purpose flour

Instructions:

  1. Trim fat from steak and cut into 3/4-inch cubes.
  2. Heat oil in a 4-quart stock pot over medium temperature.
  3. Sauté poblano pepper, onion, garlic and seasonings 3 minutes.
  4. Stir in tomato and tomatillo and sauté 3 additional minutes.
  5. Add beef cubes to pot and stir to blend with seasonings.
  6. Whisk together broth and flour until smooth.
  7. Pour broth over beef mixture and stir.
  8. Bring to a slow boil.
  9. Reduce heat to low.
  10. Simmer, covered, 1 1/2 to 2 hours or until beef is tender. Stir occasionally.
  11. Serve with tortillas and favorite toppings!
