Carne Guisada
Ingredients:
- 2 lb Beef shoulder
- 1 tbsp Olive oil
- 2 Medium fresh poblano peppers, seeded and chopped
- 1 Large white onion, chopped
- 3 Garlic cloves, crushed
- 1 tsp Kosher salt
- 1/2 tsp Ground cumin
- 1/2 tsp Ground black pepper
- 1/2 tsp Chili powder
- 1 Large fresh tomato, chopped
- 1 Large fresh tomatillo, chopped
- 3/4 cupReduced-sodium beef broth
- 2 tbsp Unbleached, all-purpose flour
Instructions:
- Trim fat from steak and cut into 3/4-inch cubes.
- Heat oil in a 4-quart stock pot over medium temperature.
- Sauté poblano pepper, onion, garlic and seasonings 3 minutes.
- Stir in tomato and tomatillo and sauté 3 additional minutes.
- Add beef cubes to pot and stir to blend with seasonings.
- Whisk together broth and flour until smooth.
- Pour broth over beef mixture and stir.
- Bring to a slow boil.
- Reduce heat to low.
- Simmer, covered, 1 1/2 to 2 hours or until beef is tender. Stir occasionally.
- Serve with tortillas and favorite toppings!
